Usually $200 to $300. USDA's 2026 average is $262. The bigger question is what happens to that money if you change your mind.
You found a farm. You want the quarter. Then the checkout page asks for money now, for beef you will not see for months.
That is the deposit.
USDA actually tracks it. Their September 2026 grass-fed beef report surveyed 84 producers. USDA grass-fed beef report.
The average deposit on a quarter was $262.25.
So budget about $250 to hold your spot. Then budget for the part nobody puts in bold. You almost never get it back.
I pulled current 2026 deposit pages. Every one of these is applied to your final bill. Every one is non-refundable.
| Farm | Quarter deposit | What it is against |
|---|---|---|
| Careywood Creek Ranch (Idaho) | $150 | Balance due before processing |
| Bristol Haven Farm (Michigan) | $200 | $1,150 total for about 88 lb |
| C.A. Wilson Cattle Co. (Missouri) | $200 | Market price per hanging lb |
| Green Fire Farm (Wisconsin) | $250 | About $790 plus processing |
| Heritage Belle Farms (Colorado) | $250 | About $1,250 total |
| Brass Family Farm | $300 | $9.95 per hanging lb |
| Deer Run Acres | $300 to $450 | Depends on animal size |
| Norris Farmstead (Washington) | $500 | $6.00 per hanging lb plus butcher |
Low end $150. High end $500. Most land between $200 and $300. That lines up with the USDA average almost exactly.
Farm pages checked October 9, 2026. Average: USDA AMS National Grass Fed Beef Report, Q3 2026.
This trips people up. The deposit is a down payment, not the bill.
A quarter usually runs about $800 to $1,200 all in. See how much a quarter cow costs.
Bristol Haven is a clean example. $200 now. $950 when the beef is ready. $1,150 total.
Heritage Belle is $250 down on about $1,250. Balance about $1,000.
So the deposit is usually 15 to 25% of the total. The other 75 to 85% shows up later in one hit.
And sometimes that later hit is two bills. At Norris Farmstead you pay the farmer on hanging weight, then pay the butcher $1.09 a pound plus a $37.50 share of the kill fee at pickup. See how much processing is on a quarter cow.
Short answer. Almost never.
Every farm in that table says non-refundable. Here is why, in their words. Bristol Haven says the deposit supports “the growth and care of a living animal, which is an irreversible process.” Deer Run Acres says once you put money down they are scheduling a butcher date and holding part of an animal for you.
That is fair. The farmer cannot un-raise a steer because you got cold feet.
The one common exception: the farm fails, not you. Havilah Beef Company refunds if they cannot produce the animal due to loss or sickness. Deer Run refunds in full if they cannot deliver.
So treat the deposit like a concert ticket. If you are not sure you will show up, do not buy it.
The deposit holds your spot. The balance usually hits around butcher day.
What I saw on real farm pages:
That means you might put down $250 in spring and owe $900 in November. Plan for it now so the freezer is not the only thing that is full.
Our eighth cow is about 50 lb of 100% grass-fed beef for $749 all-in with shipping. One price. No deposit, no second invoice, no butcher bill at pickup. It fits most fridge freezers.
Buy the eighth cow share →USDA tracked deposits for every size. Same report, same 84 producers.
| Share | Avg deposit |
|---|---|
| Eighth | $133.33 |
| Quarter | $262.25 |
| Half | $449.44 |
| Whole | $734.72 |
Bigger share, bigger deposit. A half is about 1.7 times a quarter. A whole is about 2.8 times.
Some farms price it that way on purpose. Deer Run Acres asks $300 for a quarter, $600 for a half, and $1,200 for a whole on a small animal.
Ask these before you hit pay. It takes two minutes over text.
Bonus: ask about card fees. Deer Run adds 3% if you pay by credit card.
