Russell county butchery has done a completely professional and humane service for our beef processing experience with this company. I have used other meat processors in south Alabama that had poor quality and service and they were bad about keeping some of the meat. Russell County butchery text me letting me know my beef was ready to pick up, I picked up my beef thinking I had all of the meat, but got another text the next morning letting me know that I had more meat in the cooler. They the prime opportunity to keep half of our beef. That kind of integrity and honesty is very hard to come by this day and time. By the way this beef was the Akaushi Wagyu. Perfect cuts and packaging. Thank you Kyle and team.
I had them process 2 deer and I am well pleased. I had some made into sausage and the rest cubed and ground. We ate some ground the first night in some spaghetti and it had a really good taste. They mixed in some beef fat but when I browned the meat, there was no fat to drain off. We grilled some of the sausage tonight and it was great. They had on the check in sheet hot or mild. I asked if they could make it hot but not super hot and it was perfect. Can't wait to fry up some cubed steaks soon. Everything is packed and labeled very nicely. I'll be taking more deer back if we can get another one.
All predone meat same as everywhere else. Custom cuts only available by order once a week. Left without buying, no idea on quality. But if the meat is the same old same old prepackaged stuff. I wouldn't waste my time or money. If you ever get up by savannah, go to the butcher block! THERE you will find the quality meats, not just pre-shrink wrapped, someone else's leftovers!
USDA Report May 2025 - please do better! On May 7, 2025, at approximately 1220, at The Russell County Butchery, Est. M2442, the IIC was in the established safe zone for the stunning attempt of the last inspected animal of the day, which was a sow. The initial stun attempt with a 22 magnum rifle with hollow point bullets contacted the animal, but was ineffective, as the animal exhibited conscious vocalization and a conscious righting reflex. The stun operator immediately recognized the failure and delivered a second stun attempt with the rifle, but it was ineffective, as the animal continued to vocalize and attempt to stand. The stun operator immediately applied a third stun attempt with the rifle, upon which the animal dropped to its side. The establishment employee then proceeded to stick the animal with the knife to facilitate bleeding, however, once stuck, the sow again displayed a conscious righting reflex. The stun operator immediately reloaded the gun and administered three additional successive stun attempts with the same rifle, which were ineffective, based upon the animal continuing to exhibit a righting reflex (attempting to stand). The stun operator administered a seventh stun attempt with the same firearm, which rendered the animal insensible, and it remained so thereafter.

Great choices and great quality of meats! The owner is supper helpful in getting meats you want but does not have in stock. His meats are from local farmers which is helping our area small farmers. Plus you are helping a Veteran also.
An asset to the community. These men go above and beyond to provide customer service not seen in today's society. If you need a processor for your family's beef,poultry, or pork needs, this is the place to go.
As a woman, I went here by myself one day. I did not feel at all concerned about my safety. They were genuine Christians and very kind to me. We loved the meat, we got bacon and some different types of sausage. My only sadness is they don't have unlimited amounts!! Definitely will be supporting this local business.
I highly recommend this local butcher! They are veteran operated and give you a small mom-and-pop feel that gives you a unique experience. I purchased my half of a cow from them and they helped me every step of the way! Great prices for Grass-fed/ grass finish beef or other requests that meet your palette's needs! If you have any questions, I would call the office. Rodney is always accessible to answer questions, promptly. They are also a great place to pop in for quick dinner meals to take home or specialty cuts. I even purchase my pasture raised colorful eggs through them. The cheddar jalapeno burgers are to die for but my personal favorite are the sweet and spicy meat sticks! They smoke these meat sticks onsite and you will often smell all the deliciousness! Bring your friends and family, support local.
This is my new go to place to get beef bones for stock. I met the two owners, Kyle and Ben and an employee when I went there. Very friendly, just good decent people. I want to share that this place is very clean. Can't beat their prices. Next time I go I'll buy eggs too. So now I also have a source for farm fresh eggs!
