I took 4 quarters and a bag of trim from my deer to make breakfast sausage. Total weight was 75#. So if you deduct the bones make it 65#'s. Then you trim the fat and silver skin knock off 5 to 10#'s. Now we call it 55#'s. You add 10% pork and back to 65#'s. I brought home 45#'s. ??? Someone's eating good in the hood. Talked to 2 other hunting partners that took meat to their own butchers in different places and they agreed I came out a least 10# short. I also thought all game meat had to be packaged as game meat and not for retail sale.
5/19/24 update: opened the first 3 steak "filet" package. 3 different thicknesses and sizes of steaks, different thickness throughout each steak as well. One of them is huge and square, not sure if they are actually filets. I've never seen a filet these shapes and sizes. And one of them is cut along the grain. Wish I could upload a picture. We had loved buying half of a cow every year from Goss Beef. This year he used Crystal Springs Meats to butcher. When we arrived to pick up the beef there was no checking of the order or even an itemized receipt for total poundage or anything at all, just "pay this and sign here"(cash or check only, btw). When we got home (5 hrs later. yes, we drove that far to pick it up) we noticed as we were putting it away there were cuts of meat we didn't order (like short ribs) and the packaging was also not what we ordered (3 steaks to a pack instead of 1 or 2, as ordered). There is no accounting on the packing for how many pounds per package either. We split the cow with other family members, so now we will have to weigh each one and keep a record which makes the splitting process way longer and harder. I've reached out to the butcher who has not responded for weeks. I've reached out to the farmer who dismissed my concern that our order was wrong and then proceeded to tell me to take it up with Steve Woods (butcher). We paid for extra cuts of meat we didn't order or want (like short ribs). We drove ten hours on a winter Saturday to pick it up. They told us we had to be there no later than 11 am. Terrible customer service. The only good thing I can say is they held it for us until we could pick it up, and the actual packaging looks tight. Will not be patronizing this business again. Terrible job and customer service.
