No matter when we have been to Brillion Butcher Shop, we have always been treated wonderfully! All of their meats are outstanding! Some of our favorites are their Breakfast Sausages and their Farmers Sausage. Also, love their marinated Chicken Breasts.
Stopped on a Thursday and asked for uncut short ribs, they cut some fresh and I picked them up on Friday. Beautiful marbling throughout, they turned out awesome. Note to others - smoke your beef ribs to 210 internal temp, this will ensure all of the connective tissues and collagens fully render and you’re left with delicious meat-candy! Best bite in BBQ!
This small butcher shop in Brillion Wis. is hands-down THE BEST! We purchased a 3# Tomahawk Steak and prepared it on our Napolean grill. We are foodies, so we only comment when it is over-the-top excellent. This cut was one of the very best cuts of beef we have had since visiting Florence Italy last year when we had a Florentine steak. We are happy you are in our back yard so to speak. This has been a great visit for me i live 90 miles sourh of here in farm country i now have two shops with excellent products and staff the beef is top line i dont do much pork but it looked excellent l hope people give it a try wont be sorry prices are well inline with market i say give it a try and enjoy i am!

The people are very friendly and willing to help you with your purchase. All the food is very tasty and very good prices. The store is very clean and neat. I do alot of my business with them. Everything from butchering to the final product. I Highly recommend a visit!
Stopped in today for the first time. We have lived in the area for less than a year and started our own homestead. We're not raising meat other than chickens so we want to support local for things we aren't growing/raising ourselves. We bought some honey bbq snack sticks, side pork, and a couple of sirloins. Snack sticks-flavorful, great texture, amazing. Side pork-also great. The sirloins were the jewel of our purchase by far. These are the best steaks I have ever had. They are incredibly tender and flavorful. The shop itself is easy to shop in. Staff was so friendly and attentive. There is an apparent care and intentionality here. We plan to shop here more and are considering placing a bulk beef/hog order in Spring. I'm telling everyone I know about this place. 10/10.
Never disappointed in the quality of the meat selection. Steaks, burgers, their specialty brats; never had a bad experience. Love their seasoning! The staff is very friendly.
